This one comes from A I N H O A (check out her Instagram page here). These pumpkin pancakes are similar to her signature banana oat pancakes but use roasted pumpkin and some more spices!

Ingredients
1/4 cup pumpkin purée (just roasted pumpkin, blended)
1 cup milk (try using hazelnut milk)
1 cup flour (can substitute for oat flour)
2 tbsp maple syrup
1 tsp baking powder
[optional] 1 tsp apple cider vinegar (to make them fluffier)
Cinnamon & nutmeg
Pinch of salt
Directions
Combine all the ingredients VERY well until blended.
Spoon the batter out in a pan and cook until golden brown on both sides, flipping only once.
