Pumpkin Pancakes

This one comes from A I N H O A (check out her Instagram page here). These pumpkin pancakes are similar to her signature banana oat pancakes but use roasted pumpkin and some more spices!

Ingredients

  • 1/4 cup pumpkin purée (just roasted pumpkin, blended)
  • 1 cup milk (try using hazelnut milk)
  • 1 cup flour (can substitute for oat flour)
  • 2 tbsp maple syrup
  • 1 tsp baking powder
  • [optional] 1 tsp apple cider vinegar (to make them fluffier)
  • Cinnamon & nutmeg
  • Pinch of salt

Directions

  • Combine all the ingredients VERY well until blended.
  • Spoon the batter out in a pan and cook until golden brown on both sides, flipping only once.
